Roast vegetable and Pasta Salad

INGREDIENTS

  • 250g Penne Pasta
  • 200g What’s Cooking Dip and Dressing Peri Peri
  • 500g Mixed Vegetables
  • 50ml Olive oil
  • 50g Feta
  • 5g Fresh basil

METHOD

  1. Pre-heat oven to 180C
  2. Cut vegetables in cubes and drizzle with olive oil
  3. Place in oven and roast for 20 minutes, remove from oven and allow to cool down
  4. While the vegetables are roasting, cook your pasta until al dente
  5. Rinse pasta under cold water and allow to cool down
  6. Mix together Peri Peri sauce and pasta.
  7. Scatter roast vegetables on top of the pasta, crumble the feta over and garnish with shredded basil
