Pickled Fish Breakfast Waffles & Flapjacks
INGREDIENTS
- 500 g What’s Cooking Simply Sweet Batter
- 125 ml Water
- 250 ml Milk
- 2 Eggs
- Ready Made Pickle Fish
- 1 kg Hake
- 125gr What’s Cooking Crispy Breading 803288
- 250gr Water
- 150ml Oil
- 400gr Onions, sliced
- 150gr What’s Curry Mince 803332
- 200gr White sugar
- 200ml Vinegar
- 1.5L Water
METHOD
- Mix the water, milk and eggs together well in a medium sized
mixing bowl.
- Add the What’s Cooking Sweet Batter pack and whisk together
until all lumps have dissolved.
- Allow the batter mix to stand for 20 minutes
- Ladle the batter (100 ml per waffle) in a preheated waffle iron.
Cook until golden and crisp
- Pickle Fish Method
- Mix Crispy Breading with water into a batter. Dip fish portions into
batter, allow access to drip off and fry in pre heated oil at 175C till
golden brown and cooked
- Prepare Pickled Fish sauce: Heat oil in a medium size pot and add
sliced onions. Fry until soft then add What’s Cooking Curry Mince
spice and sugar. Stir until sugar starts to dissolve
- Add water and vinegar and allow sauce to simmer for 30 minutes
- Pour thickened Pickled Fish sauce over fried fish portions.
- Allow to marinade for at least one day before serving
