Pickled Fish Breakfast Waffles & Flapjacks

INGREDIENTS

  • 500 g What’s Cooking Simply Sweet Batter
  • 125 ml Water
  • 250 ml Milk
  • 2 Eggs
  • Ready Made Pickle Fish
  • 1 kg Hake
  • 125gr What’s Cooking Crispy Breading 803288
  • 250gr Water
  • 150ml Oil
  • 400gr Onions, sliced
  • 150gr What’s Curry Mince 803332
  • 200gr White sugar
  • 200ml Vinegar
  • 1.5L Water

METHOD

  1. Mix the water, milk and eggs together well in a medium sized mixing bowl.
  2. Add the What’s Cooking Sweet Batter pack and whisk together until all lumps have dissolved.
  3. Allow the batter mix to stand for 20 minutes
  4. Ladle the batter (100 ml per waffle) in a preheated waffle iron. Cook until golden and crisp
  5. Pickle Fish Method
  6. Mix Crispy Breading with water into a batter. Dip fish portions into batter, allow access to drip off and fry in pre heated oil at 175C till golden brown and cooked
  7. Prepare Pickled Fish sauce: Heat oil in a medium size pot and add sliced onions. Fry until soft then add What’s Cooking Curry Mince spice and sugar. Stir until sugar starts to dissolve
  8. Add water and vinegar and allow sauce to simmer for 30 minutes
  9. Pour thickened Pickled Fish sauce over fried fish portions.
  10. Allow to marinade for at least one day before serving
